Here is a photo of a Blue Pumpkin my friend Pat gave me. It's kind of light greenish blue and very lumpy. I was responding to a comment on a previous post about roasted pumpkin and squash seeds and thought I'd post this for all to see. The seeds will probably be the same as other squash but it just looks enough different to me that I imagine they may have a twist on the taste. This is a heritage vegetable and I bought seeds from Seed Savers in Decorah, Iowa to plant my own next year. If you haven't visited Seed Savers here is their website http://www.seedsavers.org. I finished my pickle relish today. Here is the recipe that I used. I got this about 20 years ago from a friend who was in her 70's at the time. Thanks Helen!
Homemade Pickle Relish Recipe
6 lbs of pickling cucumbers abt 3 quarts chopped finely
6 medium peppers chopped fine: 3 red and 3 green
6 medium onions chopped fine
Helen used to put in 1 jar pimento chopped fine. I did not
I added a few yellow banana peppers chopped fine
Mix with 2 quarts boiling water and 1/2 cup canning or pickling salt. Let stand for 2 hours. Drain. Make Syrup.
1 pint vinegar
5 cups sugar
1 tbs cornstarch
1 tbs mustard seed
1 tbs celery seed
1 tbs turmeric
Pour syrup over vegetables and simmer for 30 minutes. Can. Water bath pints 15 minutes. Makes 8 pints.
What a great feeling! I submitted my response to the edits that the publisher suggested on my manuscript. In the process I ended up rewriting the ending:) thanks for all your help Pat! Now on to the cover design.
